Cooking kills most of the anti nutrients (toxins). The key word is most because these foods still retain small amounts of anti-nutrients after cooked. Dairy products not eaten in Paleolithic diet contain several anti nutrients. Anti nutrients in wheat, grain, rice, beans and milk are: Enzyme Blockers, Lectins, Glycoalkaloids, Exorphins
- Enzyme Blockers: Called "protease inhibitors" can block body's digestive enzymes (stomach) pepsin, small intestine (trypsin) digest starch (amylase). Raw food plants have natural enzymes while cooked foods destroy food enzymes and pancreas produces digestive enzymes for digestion. Enzyme blocker foods are grains, wheat, beans and potatoes. Can cause enzyme blockage and pancreas over compensate for enzymes being blocked? Enzyme blocker can put undue stress on the pancreas. Pancreas not only produces digestive enzymes but also insulin.
The modern Paleo Diet has adopted the diet food from the ancient Paleolithic diet. The caveman was healthy, energetic and did not have diseases that have progressed within the last thousand of years. Their lives depended on “Survival of the Fit”. Health and fitness was determined by diet. Modern society has made progressive advancements in the last 10,000 years. Foods are massed produced. In the mid twentieth century to increase production and profits pesticides, herbicides, additives, preservatives and antibiotics introduced in commercial foods production. This practice remains today. There is an increase in obesity, high blood pressure, heart disease, type 2 diabetes, fatigue, immune diseases and other disease. Heredity can be the cause of certain diseases. Heredity can not be controlled. People can control what they eat. Scientific study has determined toxins in foods, fast foods, convenient foods are making us sick.
